Sorry to hear you're having problems, hope the cat is ok.
Generally helps to offer as much information as possible for suggestions.
Generator mod.# etc. Generators are usually rated in total wattage, running and peak.
Bogging down, meaning it changes tone slightly or totally stalls out?
Carb replacement? One would hope that whomever did this work would have tested the generator under full load conditions. Bet that was an expensive repair, I'd pursue that avenue first.
Hard starting and not operating under full or partial load could indicate an "ongoing fuel delivery problem". Adjustment, jetting, altitude, possibly even fuel quality issues?

Best of luck.

Do you let the generator warm up, before turning on the air conditioner. Does the generator smooth out after bogging down at start up ?
Did your cat do something to your generator ?

It is quite normal for the generator to change its sound wen a new load is added, especially a big one like an a/c. The engine needs more power (uses more fuel) to enable the generator to produce the extra amps needed. That's not "bogging down" - it's just the way it works. You don't hear that at home because the power "generator" is probably hundreds of miles away at a big electric utility.
