change thermostat

I have a 2011 326 MKS Cougar I want to replace the duo therm dometic
with a honeywell RTH5100B i like the high/low setting for hot/cool.
most people replace it with the hunter,is there a reason?
I have read that some people use the honeywell,i would like to
see some pic of the wiring if they are out there?
and by the way this is a great 5th wheel,had it 2 months been out 3 times
1 week each time.

Your thermostat is dependent on the heating system you have. In other words, having the high/low settings only work if your hvac system is a two stage. Going from a mechanical stat to a digital one is simple, as the digital stat will replicate the signals of a mechanical unit. As far as installation, the stat screws should be marked with letter codes. You want to make sure the wires are hooked to the same terminals as the original one. This is low voltage, but it's a good idea to power off the system anyway as you don't want to send any conflicting signals to the HVAC system during installation. Mercury bulb stats aren't a good idea in RVs, as they must be perfectly level to function properly.
