Ate you sure the engine is overheating or is the gauge wrong?

Is there a temp correlation? Kinda sounds like a sticking thermostat

I had a Dodge pickup with the Cummins engine that did that. It warms up with the thermostat closed, then when it opens, the temperature drops, and it closes again, ad infinitum. Where the temperature sensor is located, it reflects the temperature differential as the thermostat opens and closes.

New thermostat $500. That is insane. The thermostat is probably less than $100 and should not be that difficult to change.
In any case I would get the thermostat changed.

Put a Scan guage D on about $150. Self install and read the digital temp from it. Also reads all output from the motor or trans. Then you know exactly what the motor is doing. Or if you have a read out of some type on the coach check the temp there. Cummins should have read the computer on board and would have seen the over heat, the did what is needed. A 1/8 temp swing is normal if the thermostat is opening and closing.

What Cummins engine? What chassis is it in? Much of the cooling system and all the gauge package comes from the chassis builder, not Cummins.
Most modern diesels use a multi-speed cooling fan for improved fuel economy and the electronic engine control lets the temperature vary over a pre-programmed range. In some engines that range is quite broad, e.g. my 2004 ISL pretty much let the temperature float between 160 and 202. The dash a/c alone caused t to fluctuate a lot because the a/c compressor also triggered an increase in fan speed.

Wow, that is a huge swing in temperature. My Cat C7 sits pretty much rock solid on 186.

They replaced the fan module, the thermostat is the next logical suspect. Relative simple repair, can't figure why the shop seems stumped.
