I saw somewhere that you can get service done at these events. If true, how do I go about requesting Girard awning service?

There will be an area where vendors/manufacturers set up a service desk. You go there and get on their list fo service. I would call Girard to see if they will be at the Indy international convention. Manufacturers usually don't attend rallies but do make the international conventions.
