The things I always forget are the things in the drawers of the fridge. Like all the sandwich meat, & Cheese, salad stuff. For some reason I forget to carry it out to the MH. Sorry your post was not answered in a timely fashion. It must have gotten buried. Let me think about easy recipes and I'll get back to you

I have a system for not forgetting stuff in the fridge..... I put my house/car keys in the fridge on top of what I want to take..... of course, I spend 5 minutes looking for them before I remember what I did..... but I no longer leave food behind..

I'm a big "list maker"! About a week before we go out on a trip,(especially a long one) I head out to the rv with pen and paper in hand. I take inventory of the pantry, check the bathroom for paper, health and beauty items and write down what I need.I also make a list of items that go in the fridge and freezer and put in on the fridge in the house. As I take things out to be loaded in the rv I mark them off the list, then recheck it before we leave to make sure everything is crossed off. I haven't forgotten anything yet!

I have a whiteboard and marker/eraser on the fridge at home. For a few days before our trip, I will write down all the stuff we want to take on the board. The night before we go, I will collect all the stuff and pile it in one room. I will put all the perishables on one shelf in the fridge. Then when it is time to go, dear hubby gets to take it all out to the TT. Works pretty well for us, only forgot two minor things on our shakedown trip this year.

OK, Cactus Camping. This is really good advice from people. My quick fix usually comes in a can or box. I always have this stuff on hand. Another idea is make TV dinners from leftovers at home. Freeze, and take out if you are overnight camping, and moving the next day. Easy to fix, not a lot of time wasted while you need your rest so you can help hubby drive from your "seat" the next day Example:
Tuna, noodles, peas, cream of soup
Meat(hamburg already fried & frozen in zip-lock bag), macaroni & cheese in box, veg all mixed together
Canned Chicken, cream of chicken soup, stuffing mix on top, bake til hot & crispy
