I don't think you will find many RV Parks open that time of year.

The closet one is a KOA.

Lake Placid / Whiteface Mtn. KOA | Camping in New York | KOA Campgrounds

You may be able to hole up in their parking lot.

Skiing there was great! However, I was there in mid-January one and it was -15F (the actual temp, not windchill). So good luck keeping warm!

I stayed at Cascade Acres in Lake Placid in the winter a couple of years ago. No water on at the sites, but I gould get some at the office. 30A power was available. The place was officially closed. But they let me stay for a reduced price. This has a permanent park component with many full time residents. It was great but right near the airport but that did not bother us.

Keep in mind that in NY they apply 2" of salt for every 1/2" of snow. If you hit bad weather your MH will have a 1/4" thick coating of salt on it. I have to run their roads too often and have a rotted out truck to prove it.
I would never even think of taking a MH there in the winter. Just saying.
Be sure to go down the bobsled and luge runs while you are there.
