Replacing carpet with vinyl - what trims the walls/cabinets?
Removing carpeting and replacing with vinyl. What trim or molding should go where the vinyl abuts the walls and cabinets? How to install?

I use 1/2 X 3/4" molding. Looks better than 3/4" or 1/2" 1/4 round. 1/2 would not cover all the wall openings. Applied with 1 1/2" finish air nailer. Some locations required adhesives. I used Loctite products for this.

They make all forms of moulding in an composite form now that is very durable can be painted ect. most home improvement stores have it in many shapes.

I used 1/2 x 3/4 shoe mold. I got the oak shoe mold at Lowes and stained it to match the cabinets.

Quarter round ? No. Shoe mold is much better looking and easier to deal with during installation. If you are installing on a slide, make sure it is not accidently nailed into the floor

¼ round and shoe moulding are not going have that "RV" look.
I've seen folks who have used this and it just kills the factory appearance. It will look residential.
My cousin and her husband just restored an '80's model Airstream and used shoe moulding all along the floor. The rest of their work was excellent but the floor moulding just seems out of place.
I buy salvage RV's to repair and resell and this is what I use to give the best factory looking appearance.
Batten Moulding
Very close attention has to be paid when trimming the flooring up next to the walls to insure a good finish. The batten moulding is very narrow and there is little margin for error.
What ever you use, go with something that best matches the rest of your RV's moulding.

No gaps whatsoever left to cover?
I am advised sheet vinyl may curl or lift at the edges without a molding to secure.

Since vinyl planks require an expansion gap of 3/8 to 1/4 inch along the walls, this would leave a very noticeable gap along the walls or maybe I dont understand something please explain.

When vinyl planks are adhered with pressure sensitive adhesive, I have never had an issue.

We had the vinyl flooring replaced in our last MH. They did a great job and didn't need any molding...........that is until the heat of storage started to curl the edges. Quarter round fixed the problem.
