I'm sure you have walked under a power pole that has a transformer that is humming, or under power lines that are doing the same.

When you make your coffee, the inverter is WORKING, and hence the humming. If you had a larger inverter, it would be working less (for it's size), and the humming would be less noticeable, me thinks.

On a modified sine wave inverter the hum noise comes from the stair step sine wave
that it produces . With increased current demand the noise will get a little louder but
is normal.

A hum is normal for an inverter under heavy load, and your coffee maker is probably in the 1000 watt range. You didn't mention the size of the inverter, but that much wattage probably qualifies as "heavy". The inverter has to pull 85-90 amps from the batteries to produce 1000 watts of 120vac output.

I would have thought you would have circuitry that would bypass the inverter when external power is applied.

That's only present in higher end inverters that are also converters. Stand alone inverters that don't have an AC input don't do that.
