Grandma Morgan's Cookie Recipes

Bev had several requests for her cookie recipes at Bethpage and I promised to post it here for those that wanted them.

Peanut Butter-ups
1 C. Margarine-1 cup Peanut Butter-2 cups graham cracker crumbs- 1/2 Cups finely chopped peanuts- 2-21/2 cups powdered sugar- 1 cup chocolate chips- 2 Tbs shortening.
1. In 2 qt. casserole combine margarine & peanut butter.
2. Microwave 1-1-1/2 to 2-1/2 Min. or until melted. Blend well.
3. mix in crumbs, peanuts, & sugar until very stiff. Press in buttered 12" X 8"" dish.
4. in small bowl, combine chips & shortening, Microwave at 50% power 2 1/2-4 min or until chips are shiny and soft. Blend well.
5. Drizzle over bars & spread carefully. Cool completely before cutting.

Oatmeal Cinnamon Chip Cookies Bake at 350 degrees 15 minutes.
2 sticks margarine - 1 cup packed brown sugar - 1/3 cup white sugar 2 eggs - 3 C. flour -1 tsp soda - 2 1/2 C quick oatmeal - 10 oz pkg cinnamon chips - 3/4 cup chopped nuts. Bake on ungreased cookie sheets. Can also spread into litely greased 9X13 Pan bake at 350 degrees 25 - 30 Minutes or until golden brown. Cut into bars makes about 3 doz. bars.

Laura Bush's Cookies Bake at 350 degrees 12-15 minutes.
1 1/2 cups margarine - 1 1/2 cups brown & white sugar - 3 eggs - 1 tbs vanilla - 3 cups flour - 1 tbs baking Pwd & 1 tbs baking soda - 1 tsp salt - 1 tbs cinnamon - 3 cups choc chips - 3 cups oatmeal - 2 cups coconut - 2 cups chopped pecans. Drop by rounded walnut sized portions on ungreased Cookie sheet. Cool 1 minute before removing from pan. Makes 10 Dozen.

But.. I don't think our cookies will be quite as good as the "Genuine Grandma Morgan Cookies"
