And I'm looking at how to cure our own, too. And smoke it. DH has ordered some English back bacon from, of all places, Amazon, but that is too much like ham to suit this ladie.

Nope! And the weaving is not quite so complete now, either, not since breakfast time. ;D

Apples happen in the fall, but bacon is year-round. Make of that what you will. Or can. Or won't. Besides, eating Primal/Paleo style means no grain/flour. Ooh! Maybe an almond flour crust! Ok, bring on the apples.

I'm thinking I have discovered a sickness that is spreading fast and there seems to be no CURE. There a definitely some sick ideas on here. Where do I sign up?????

How about a mixture of cream and hot cheeses inside, bacon outside and a batter coating, deep fried?

Do I need to char and skin them first?

Yes you do! You can do them on a grill or in a oven. Broil and turn em to get the blisters just right - then into a zip lock to sweat on the counter. When cool refrigerate - pull em as needed and peel or peel em all - and then refrigerate / freeze.

That's how I do it....

Thanks, Steve. We have no open flames in the kitchen, so the grill or broiler will do.

Do you cut and gut them first or later?
