I have heard that the best way to eat ludefisk or scrapple is to place it on a pine board and roast it slowly over a smokey hickory and apple wood fire, then throw the ludefisk/scrapple in the fire and eat the board.

Hey, I thought this was a BACON forum... I guess I have to go buy some nice thick sliced, apple cured goodness from the deli next week. All this talk of souse and scrapple ain't getting it.

Okay. I get it with Bacon. I love it, eat it with everything. But must say about Scrapple: my wife is from PA, started buying Scrapple soon after we married (41 yrs ago), and I turned my nose up at it. Finally tried it about 15 years ago the way she likes it - sliced thin, fried crispy, and smothered in waffle syrup - it's delicious.

But being from NC, the REAL delicacy is country cured ham. If cured right and cooked right, and served with redeye gravy and a fresh baked biscuit, it can be considered a food of the Gods.

As has been said before - the great thing about bacon is it makes everything better. Wrapped chicken - hamburgers - stuffed jalapeņos - waffles - broccoli salad. You name - put some bacon on it and Bam*!*$ it's better.
