Hey. Where's the Bacon
What amazes me is how flat the strips stay when they are baked instead of fried. All my 70+ years I never even heard of baking bacon. Microwave is similar, but you waste all that good fat in the paper towels. Can't do that! (I know: heresy!)
Something else that surprises me: With my thinly sliced, lower sodium bacon sitting on the countertop, already cooked, the previously unconverted Englishman says this thin streaky bacon is delicious. Imagine that!

The preferred method of chefs with bacon is the oven for the reason stated. If you go through a buffet and see lots of straight, crisp bacon - you can pretty much bet it was oven made. Then there is the cheater method of sprinkling a little flour on the delectable goodness. The result - a flatter, straighter strip and a good start on some gravy!

Shall I send pics from the cruise ship next month? It won't be my home cooked bacon on the buffet or the plate, but I reckon I can bet it will have been baked.
Bet it won't be woven though.
