Thumbs up How do you cook your steak?

We had a discussion on our last trip about the best cut of meat to have for dinner and how to cook it. DW is all for ribeye started in a fry pan and finished in the oven.

I am of the opinion that there is nothing better the a good thick pork chop hot of the grill.

Any thoughts on the best way to cook your favorite cut of meat and how you spice it? If grilled meat is not your thing then what would be your favorite go to for dinner camping and how do you cook it or spice it?

Filet, salt and pepper, oiled hot pan. Render fat side down for 4 minutes. Seared 4 minutes per side, pad of butter on top baked at 425 for 4-5 minutes. When I do it just right it’s amazing.

Have a large cast iron skillet I cooked steaks/chops etc in
Hot.....sear both sides then finish in oven
BUT she has asthma and can't take the smoke affect anymore


So outside to the charcoal BBQ


Take meat out of fridge 1/2 before grilling......start coals at same time
Then just before heading out to grill I coat both sides with course grind sea salt


On to the hot grill
Sear for 2 minutes...rotate 1/4 turn...sear for another 2 minutes
Repeat for other side


Then move from direct to indirect heat and cook for 4 minutes longer


Nice char on outside with a pink medium rare inside
Place on board...cover with aluminum foil for 5 minutes


While resting.saute some onions or mushrooms


Plate the meat...pour onions/mushrooms over steak
Sharp knife/sturdy fork and consume with glee


Baked tater, mashed taters, sweet tater, cooked carrots, pea/onions, fried zucchini


Yummmmmmmmmmmm

Grill bacon wrapped fillet 4 minutes each side seasoned with a little Johnnies season salt

I keep it simple..Let steak(s) rest on the counter until they reach room temp.

NO salt/pepper/or any other slather...(I like tasting the dead steer, not the spices & "improves)
set oven to 135 deg, steak in oven for an hour flipping once
Griddle/Fry pan..heated to sear deg.
steak on & count to 15, flip, another count to 15,flip, let sizzle until blood just barely starts to "percolate" then flip one more time for a long count until blood just barely starts to "percolate" and on to the plate it goes....Medium rare..add taters & gravy, a veggie and a biskit (or 2)..
and last.. 321 cake with ice cream topper..(Just LOVE the residential fridge!)

I think the best way to cook a steak is on the grill. Rib eye , porterhouse, T-Bone, they are all pretty good if you prep them right. Defrost them first or use a fresh steak. Place on a plate and sprinkle teriyaki sauce all over one side, then sprinkle adolphs powdered meat tenderizer on top of the steak. Grab a fork and begin stabbing the steak to for about 30 secs or until all the powder and sauce is forked into the steak. Do the same thing to the other side of the steak. Now let it sit for 1 hour. Then place it on a hot covered BBQ grill for exactly 3.5 minutes on each side for Med rare or 4min on each side for med. I promise you it will be worth it.

Porterhouse/t bone on the grill.

Couple of minutes on each side, just enough to sear it.

Basically seared with body heat restored still twitchin'.

I love me a rare steak.

But it's rare that I eat steak anymore.

A good pork chop on the grill also cooked hot and fast is also a treat.

Big fan of porterhouse.Start with fresh steak open and let breath until room temp.I like to taste the beef so I do not add much seasoning.Coarse grind pepper lightly both sides.Put on hot charcoal grill,depending on thickness,4-5 min, then flip and coarse grind sea salt lightly,4-5 min on other side,flip lightly salt, remove from heat, put a little butter on and wrap for about 10 or 15 min.Usually comes out nice med. rare.On the other hand the DW likes hers well done to almost hockey puck consistency.

Tritip seasoned with a mix of salt, black pepper, and garlic powder over oak...


Also good if you skip the seasoning, and marinate in Italian dressing...

If Prime isn't available a good choice ribeye. The day before I sprinkle with kosher salt, wrap in a thick layer of paper towel. When time to cook I use olive oil then pepper the meat while getting grill screaming hot,(charcoal have a hot side and cool side, cook till 120 on the cool side then finish on the hot side to 125.)(Gas same but when grill marks are there I turn off the center burner)A few pats of butter with chives, Let rest for 10 min.
Some times I put some apple pellets in my cold smoke tube and smoke the steaks for an hour, then wrap in plastic for an hour the cook as above

Love Rib eye (bone in is best), flatiron, strip stake, 1 in thick pork chops (bone in). Let them come to room temp then season with coarse sea salt, garlic, fresh ground pepper.

Then BBQ on high heat searing both sides (3-4 min per side) then off the grill and rest for 10 min or so. Gives us great med rare steaks and like our port chops with a bit of pink in the middle.

Oh and served with fresh veggies and a bottle of aged (1997-2001) hearty red wine.

Ok now I know what is for dinner tonight
