Starting out I thought my dream jeep would be a Rubicon w 3" lift and 35's. Planning on having something before I head west in 2015.

My wide drives her 2001 Tj everywhere on 37's. Here's her Jeep.
Sorry no picture just on the road!

Regarding lifting JKs, I just used the Daystar 1 3/4 lift and fit 35s on my 2008. Here is one link:
Daystar KJ09137BK - Daystar 1-3/4" Comfort Ride Lift Kit in Black for 07-14 Jeep® Wrangler & Wrangler Unlimited JK - Quadratec
I have the GenRight aluminum fenders front and rear. At the rear you need to grind down a bit of metal at the front part of the rear opening. With the Rubicon I did not have to change shocks. The rear will still rub a bit with hard wheeling, but highway manners are pretty much as stock. To fit the 35s, I kept the stock wheels with Spidertrax spacers.

How does yours handle on highway and high speed?

It drives & handles fine. Tows perfectly straight with no problems.

I've put the place on my list for a visit when we make the big west coast trip in a couple of years.
