I've used GF flour (rice, potato starch, etc) and sometimes cornstarch or arrowroot as thickeners. They all surprised me by actually working. 😉

Many of the Asian batters use a mixture of flour and cornstarch for shrimp etc. I would think adding cornstarch to GF flour might be a natural compliment for a lot of things. Hmm. Rockport shrimp or fish fry - maybe even some egg wash and sesame seeds in a little dark sesame oil...

And Steve - I enjoyed that fishing trip as much or more than any I have been on. And as a former boat owner and son of boat owner - I have been on a few. Seeing our ladies bring em in was mutantastic!

I've used some that call for straight cornstarch as breading. It makes for a nice crispy coating. And it sounds like you're cooking on the fly...I'm lovin' it.

Arrowroot powder will also thicken liquids and is gluten-free
