Wilson Jean-Baptiste taught the steel pan class this trip. There were 19 of us in the first class and 18 in the second. I was the remedial student who showed up for both. Can you imagine the sound level of all those pans going at once? The Saints marched as fast as they could go to get away from us!

Bob finally called the doc's office again and got put on an antibiotic... and he finally feels like he is on the mend, although still tired.... He is hoping to get to join in on festivities Christmas Eve... then a few days off by ourselves and then Last Sunday of the month will be full of fellas & their females, and families for our Christmas.

It's pretty simple... 3-5 vanilla beans ...and there different kinds which impart slightly different flavors...so experiment...
and Alcohol...70 proof at least. Least to impart a flavor is vodka, but folks use rum, bourbon or brandy also.
Use a jar, a straight sided one is nice. About a cup of alcohol... and slice your vanilla beans in half lengthwise so the seeds and innards are exposed...
place them in the jar and cover with the alcohol... cap it, and shake it up... let it sit for about a month ...shaking daily or as you remember.... now if you want really strong vanilla flavor, after a month, you can remove the beans and add another set of beans to the extract you have made and let it go then for another month...but that means you have to wait to use the yummy extract!
