Some of the ladies ask Earlene for her dip recipe.
Here it is:


Jalapeño Beef Dip

3 pkgs. room temperature cream cheese
1 pint sour cream
4-oz can diced green chiles
2 pkgs. Buddig beef or 4-6 oz. roast beef or pastrami (chopped fine or slivered)
Minced or dried onions to taste (several tablespoons per container of cream cheese mixture)
Cilantro (optional)
Dash of Tabasco
Tsp cumin
Salt and pepper to taste
Bottled or canned jalapeño or Serrano peppers (to taste)
1 cup pecans, chopped
Process cream cheese in mixer of food processor. Add sour cream and mix or beat until well blended. Add ingredients up to hot peppers. Pour into ovenproof baking dish or pan (treated with Pam or butter for ease in cleaning). Top with peppers then top with chopped pecans. (If uncertain of the heat tolerance of guests, leave the peppers off half of the dish before adding the nuts.) Bake for 15-20 minutes at 350 degrees covered, 5-10 minutes uncovered.

This GC is just getting better and better. Way too much fun running around the Texas Hill-country being silly and enjoying ourselves. Who knew one could visit every building in Luckenbach Texas, listen to some great musicians and still get back on the road within a couple of hours.

Got home Friday, well almost.....Just on the north side of Susanville, truck lost all boost....turbo ok, so thinking wastegate stuck open.....but had to continue on.....have a full set of gauges to monitor things, so about 40 miles from home, there's a rest area....was thinking bout stopping, then the truck decided that for me....trans toasted, but was able to coast into a spot....4 hrs later, got both truck and trailer towed into a dealer, so will be getting an est Monday.....wife came to the rescue, so now at home....truck has exactly 200,000 miles....
