From some of the reactions from Texans here it sounds like he should have paid a little more attention!
I think the "vegetarian red beans and rice" bothers me the most- I'm almost afraid to ask if they're using the small red beans or the same kidney beans they (wrongly, right?) are putting in the chili...

Sounds to me like he was hard of hearing or sure didn't pay attention.
Kinda sounds like Beaumont, Orange, Bridge City...them that can't make up their minds,, their inTexas and they wish they were in Louisiana,, don't know why..?? But I must admit.. you get into Louisiana.. over around Welsh, Jennings,, Lafayette, Breau Bridge,,, New Iberia,,,,Now they got some good Cajun Food.
Now Chili,,,, it ain't Chili if it's got beans in it.

Well, the Pork is "Carolina Style". That would have been my first clue. The rest looks like a mix with Cajun thrown in. Frankly, if it wasn't for the vinegar I'd say it looks pretty normal for places in Tejas. Of course that's just my opinion. :-)

NO WAY! There is no room for gravy. And you don't put gravy on your french fries for heaven's sake.

One of the things on the P.T restaurant's menu is fried chicken served ON waffles with maple syrup. Is that a for-real Texas thing?

Are you for real? Fried chicken is served with mashed potatos and gravy and fried okra. Have your waffle and syrup tomorrow morning.

OK, here's lesson #1 on how to eat a large Goodson's chicken fried steak.
1. Cut the steak in half. Place one half in your to-go box and the other half on one end of the plate.
2. Move the fries to the vacant end of the plate.
3. Take the huge bowl of gravy that was delivered to the table with your order and smother the chicken fried steak with gravy.
4. Git after it!!!

Oh yes and some good yeast rolls or biscuits to finish up the gravy. But you need a couple of biscuits left to smother with "Grandma" molasses.
