I agree, a bit of water really opens up a scotch. I'm actually more of a Bourbon man myself. My current favorite is Bulliet. I like it on the rocks.

James - agree on the water but have gone so far as to use a small cube ice tray and freeze spring water. 1 little cube - cools it a little and while a bit more than a few drops - it's a nice opener. City water/ice - no thank you please.

Is anyone else getting thirsty?

Hey Spidey! I love Bulleit on the rocks too. Since you like bity bourbons like me, consider trying Bookers. It is sold cast strength, so after a minute chilling on the rocks, it is awesome. Also, a Manhattan made with cast strength Bookers is really something special.

My favorites are from the far North: Orkney. Top of the list has to be Scapa, followed by Highland Park. If you want to cool down the liquid, without diluting it try those "Scotch Rocks" that are showing up in stores here. A set of 9 granite (or some other hard stone) cubes that live in the freezer. PLace a couple in a glass and pour your libation of choice - they cool it down without diluting it down! When done just rinse them off and return to the freezer...

I've tried the more "common" single malts but always come back to Scapa as my favorite. I even tried the Yamazaki Single Malt from Japan - it was different, but definitely not something I'd buy again!

I'll second Mr. M's recommendation of Red Breast Irish Whiskey. For Scotch, my current favorites are Glenmorangie Quinta Ruban and Jura Origin 10, and I never say no to a bit of Clynelish. I like my bourbons with some bite to them, so Bulleit is our default. I do, however, make a wicked good bacon infused bourbon using Buffalo Trace.

One of the requirements for the future RV is a proper space for the liquor cabinet, but we will have to downscale the variety of scotches on hand. Of course, we'll have one heck of a party when the time comes to downsize....
