Mrs. Clark’s corned beef.

Pick whatever beef you like.
Add it to a big pot with 20 each whole pepper corns and coriander.
Two whole onions cut up
Two bay leaves
One garlic head divided and peeled cloves.
Bring to a boil and the simmer for four or more hours.
Add Cabbage and simmer an hour.
Add potatoes and carrots and simmer till the taters are done.

Good stuff, I do it every year.

Seven couples in our RV village at the National Wildlife Refuge we are all volunteering at got together for corned beef, cabbage, potatoes, carrots, a couple of green salads, and washed it all down with Irish whiskey and beer. We all had a great meal and evening.

We're having a dinner Sunday here at SunShine Key...eight couples, 12lbs corned beef in multiple crock pots with all the trimmings.

We did the corned beef in a crock pot. Sauteed the cabbage. Red potatoes and rye bread.

We are staying at Sentinel Peak RV Park in Tucson. Last night, the park put on a St. Patty's Day party, and provided the corned beef, cabbage, and veggies. Park guests all brought other side dishes or deserts. We had a great time, and thanks to our camp hosts, we didn't have to do the cooking!

We did it in the slow cooker crock pot this year. We didn't want to heat up the MH it was 91 outside. I think we will go back to the old way of cooking it, on the stove. It was okay, didn't have space to cook the cabbage with everything else in the pot. We also had the Soda Bread yum. We will look to see if anyone has them still on sale and put them in the freezer.
Glad to hear ya'll had a good dinner.
Thanks for the responses.

Tim
