question(s) for ceiling replacement

Well, I haven't actually started tackling my project, but I want to gather all my info. ahead of time. I will be replacing the ceiling panels and roof on my 2000' Salem Lite and am looking for input from people who have redone their roof/ceilings.

Do I have to remove any cabinetry, etc, to install new ceiling panels? The wood backing that is in there now (what the paper coating on the ceiling is attached to) is very flimsy. I'd like to replace it with something stronger, like thick plywood or maybe OSB? Also, I'd like to insulate it better, if possible.

I know there's a lot of products to choose from. Ideally I'd like to make the roof more durable/weather resistant than how it came from the factory.

Once you get the sheet metal off the roof, after removing vents etc. and insulation you will see where the roof meets the sides. Unscrew roof rafters from walls. I propped up the cabinets and left them attached to the walls. The roof lifted off with ceiling attached. I copied the frame and installed new paneling flipped it over and installed on rv. Then installed new insulation and finally the new sheet metal. Used 2x2 lumber. Lots of work, but the result was great.
