I quite agree with the book and have suceeded a couple of times with aging until the wine had mellowed. This wine just got worse . I can't even describe the effect but could be likened to drinking ipecac.

When the wine is made properly you initally get a rush taste from the ginger (not harsh though) and then the cinnamon (oops - forgot this ingredient above) kicks in and gently spreads throughout your mouth with a hint of the cloves and lemon. Hard to describe but it is fantastic.

Yes, come to think of it I used to make beer, from scratch. Only problem that being a true Canadian, the demand was stronger than the supply!

LK........You do garlic? In our travels I pick up different kinds of garlic and supply the neighborhood. In return I get zooks, beans and tomatoes. Cool! I don't have to mess with them.

If any of you gardeners are garlic heads (pun intended) and you are in California, Gilroy is the garlic capital of the world. Garlic ice cream, garlic everything and the whole town smells like garlic.

Roadrunners, I do onions for summer consumption. Onions are a tough one in our season. a) it's quite short, b) the nights get too cool, c) some underdetermined thing, don' no wha dat is???

Got up this morning...looked outside...didn't see one brass monkey!!!! must be because its -20C. I did see a rabbit trying to jump start a carrot though. now that's cool

LK..don't hog all that good snow for yourself, we want some too! Skiing is sparse. Gas prices too high to go up into the Park to do a lousy 20 K.

-22? this morn. Woe is me.

If any of you will be around here this winter....try camping at La Baie on the Saguenay Fjord around the fishing shacks. Get there for the Carnaval de Chicoutimi. They got stuff there that makes Screech seem like Kool-Aid..........LOL
