Barbara,
Stella will make some buttermilk biscuits for breakfast and if we do the omelettes in a bag, I'll bring a large pot and will help in preparing them.

Stella has a new ice cream dessert that she's been wanting to make, so we'll bring that Saturday night.

Barbara will add the biscuits to the breakfast sign up, but wanted to let wanted to let Stella know that the dessert is covered for Saturday night in conjunction to the retirement festivities!

She can make the ice cream dessert on Saturday afternoon and everyone who stops by to visit w/ ya'll can have a spoonfull!!!! Just a suggestion!!!! Her new recipe won't be the reason we'll stop by....just an added bonus!!!!

UPDATE on the meals for Jay & Stella's retirement bash weekend!

For those coming in on THURSDAY you can check out the topic "March 19 - Crawfish Boil". Please sign up there with Carla if you plan to attend.

FRIDAY - ON YOUR OWN - everyone will be arriving at different times so you can do whatever you desire.

SATURDAY MORNING BREAKFAST (9:30 AM, rally room) - see sign up below.

SATURDAY NIGHT CATERED BBQ MEAL (6:00 PM, rally room) - Pitmaster BBQ will be catering this. We got the price down to $7.00 per person. I will need to collect this by noon on Saturday. Please see me, Barbara, in site #98 and please try to have exact change. If you can't find me, call my cell phone at 281 382-3237. REPLY to this post and I will list the names below. I will call Pitmaster on Monday, March 16th with a final count of people participating. (92 people at last count!)

Just wanted to thank you for organizing the meals and the barbeque caterer for the retirement bash. It takes time and effort to do this. You do a great job. See you on Friday night.

Thank you for posting your accolades! Many people do not realize what a huge task this is and Barbara has been so willing to tell me over and over again that she'll take it on. She does a great job, well organized and I know I don't have to worry about it. It is a huge load off my shoulders and having her do this saves me so much time and allows me to focus on many other things that need planning for a rally!

Aw, thanks....you guys are going to make me blush.

I did this all by myself for another club for many, many years and enjoyed it. Years of trial and error have taught me HOW things need to be done. I can see how much Sandy tries to take on and any way I can help her, I will. If everyone will do their part by paying so I don't have to hunt them down, then it would be MOST appreciated.

Here is the recipe for the Baked Pancake. It originally called for it to be bake in an iron skillet...but since I don't have one.....I hope everyone enjoys it.

Ken

Baked Pan Cake, Apple

Grease a 13” x 9” baking pan
Preheat oven to 375 dF

1 apple, cored and thin sliced. Spread evenly over bottom of baking pan (2 apples of small)

Pancake batter( I like Pioneer Buttermilk Baking mix (1-1/2 cup milk, 2 eggs, 2 cups mix))

1/3 to ½ cup, coarse chopped pecans
1/3 cup brown sugar
2 to 3 tbs flour.
Thoroughly mix and sprinkle evenly over the top of the batter.

1/3 stick margarine or butter, heat and drizzle over the top of the batter and nuts. This can be held back and poured over the baked pancakes when served.
Drizzle honey to taste over the top of the nuts.

A light dusting of cinnamon can be added.

Bake at 375 dF for approximately 25 minutes ( I check at 20 minutes) until a toothpick in the center comes out dry.

Serve warm and enjoy

BOOMERS ARE WONDERFUL!!!

Thank you to all the Boomers who came to me with money! I did not have to chase any Boomers down to ask for money and I had enough people who brought correct change that I never needed to use the change I had gotten in advance. This was a great opportunity to get to know more people and renew friendships with people I hadn't seen in a while.

It was a great weekend and I had a fantastic time!
