Hi Everyone,
We had such a good time meeting everyone and sharing in the food and laughter. Thank you for your warm hospitality. Some of you asked me to put the recipe for the Taco soup on the forum so here it is. I hope you enjoy it.
Sandy's Taco Soup
1 pound lean (98% fat free) ground beef
1 chopped onion
1 chopped green pepper
2 tsp. finely chopped garlic
2 pkg. Taco seasoning mix or
3 tsp. each cumin, chili powder, paprika, oregano
6 T. Ranch dressing mix
1 can each of the following, undrained:
Pinto beans
Red kidney beans
Garbanzo beans
White hominy
Yellow hominy
Navy beans
Santa Fe corn
Stewed tomatoes
Rotel tomatoes
5 cans chicken broth, 98% fat free
6 tsp. beef bouillon crystals
3 T. Worcestershire sauce
In "large" soup pot, brown meat until pink then put into colander and drain off fat then rinse with hot water. Return meat to pot and add onion, green pepper, and garlic. Saute' until vegetables are softened. Add remaining ingredients and bring to slow boil then turn heat down to simmer. Cook for 3 to 4 hours. Taste periodically for additional flavoring as needed.
