Ok, so all this talk of scrumptious roasting piggies---- got me salivating.
I have just spent my afternoon figuring out how to make and how many ---Potato pancakes to compliment our piggie.
Old family recipe using onion, garlic, parsley, egg and potato.
Served with piggie and applesauce, and sour cream.
I am going to pre make 100 of them and do a finish cooking the day we eat.

OMG-thats sounds good! If you are making 100,I presume they are small? That sounds like quite an undertaking and I know they will be enjoyed by all. Hope you bring the recipe for them also!

Normal size, figuring at least 3 each, they freeze well and re-cook. They a good with eggs in the morning too.
I will pre cook and freeze and we can fire up a few grills, with the griddles on to do the last cooking.
Someone should make some homemade applesauce, that would be yummy.

Applesauce sounds good,maybe someone in "apple country" who can get them cheaper than us on the east coast could make it.Here we eat cole slaw and baked beans with our bbq pig,so I'm making some Cowboy Baked beans a recipe my niece gave me and is always a hit. Whatever anyone else makes,we know we always have lots of good eats with this bunch!

We are planning to come up for some really good BBQ. Have a few details to work out. Mayberry in late October should be very nice.
