Hi Folks,
Since we have such great pot luck dinners I thought it would be nice to share our wonderful recipes. If people will email or pm me their recipes, I will put it together and print it out and Doris said she would bind it. Maybe it's your favorite, maybe someone has asked you for the recipe or maybe somebody raved about it at a dinner. I will try to organize them, but I won't do a lot of proof reading.

Can we start with requests?

I request:

Karen's salsa recipe.

Ruth's sweet and sour meatballs.

Barb's Chicken Tarragon.

Sandy's Peach cobbler.

I already have and think they should put them in the book, Ruth's sausage soup (except I add potatoes instead of rice), Mo's kielbasa, cherry's and pineapple, and Nancy's coleslaw with ramen noodle salad.

So far no recipes are coming my way yet. Is there an interest in the cookbook? And those of you Nor'Easters where the man in the family is the forum poster, please ask your wives if they think this is a good idea and would like to contribute.

Lynn needs them sooner, so she can disperse them at the rally. I'd like to put them in a booklet (she'll put them in some kind of order), and since I'll be Hawaii (I love saying that LOL) until just before we leave, I'd like to get them going long before that.

Oh, and Andrea..your dip..that's another recipe I'd like.

Lynn ,Here are 2 requested recipes:
Sausage, spinach & rice soup
12 hot italian sausages, casing removed, break up & saute in large pot, adding 2 large diced onions and 6 large minced garlic cloves. When sausage is nice and browned add 6-15 oz. cans of chicken broth and 2-15 oz. cans of stewed tomatoes.Bring mixture to a boil, then simmer for 30 minutes. Add i pkg. frozen chopped spinach. Cook an additional 15 minutes, then add 2 cups cooked rice. Serve and enjoy!

Grape jelly meatballs
2 lbs. ground meat(meat loaf mix), i egg, slightly beaten, 1 large onion, grated. Mix, making appetizer size meatballs, fry in a little oil.
I used frozen swedish meatballs (the quick way)

Saucee: 1 12 oz. bottle chili sauce, not ketsup Juice of 1 lemon and 1 10 oz jar grape jelly.
Heat chili sauce,lemon juice & jelly in saucepan, stirring till the jelly melts. Add meatballs, Enjoy

Are those the meatballs you had at Association Island? They were great! I didn't know they had grape jelly in them. You are the first recipe poster. Thanks.

Frankies shrimp cocktail

2 lb cooked baby shrimp
2 small jars cocktail sauce
1 bunch washed and chopped cilantro
2 diced avacados
1/2 a limes juice

Combine ingrediants and chill,serve on shredded lettuce

Baked garlic shrimp cassarole

3 lb medium cooked shrimp
1 small tube garlic paste
2 rows smashed ritz crackers
2 tbsp grated cheese
2 tbsp paprika
1 stick melted butter(skim salt)
salt and pepper

Mix ritz,cheese,paprika and butter.Mix shrimp and garlic paste and put in baking pan,top with crumbs and a couple tbsp water and bake at 350 for around 20 minutes,but check and cover if crumbs are getting to dark.

Our salsa is made from memory and we adjust it to taste,so add or subtract as you go.

2 small cans whole tomatoes,diced
1/2 cup diced onion fine
1 clove chopped garlic
1 bunch cilantro chopped fine
1 seeded jalapeno chopped fine
3 scallion chopped

lime juice
salt& pepper

Mix and chill

I like a small amount of white vinagar in mine.You can add diced bell pepper,tomatillos,pablano, plenty of variations.
