Help needed! Mexican haystacks for 80 people!

Ladies,

We have 80 people signed up for the Mexican Haystacks lunch on Sunday at the Memorial Day Rally in Miller Creek which is the largest group ever to participate! There is a massive amount of food to be purchased, prepared ahead of time and transported to the rally. Unfortunately, I cannot do this alone and need your help!

Most of the items can be purchased in bulk form at Sam's Club (or Costco) because they come in larger quantities at a better price. I'm hoping you have a Sam's or Costco card! I've add the brand and approximate cost for the Sams Club items.

Please look down through the list below and let me know if you can purchase something on the list, prepare it ahead of time (cooking, chopping, etc) and bring to the rally.

Please email me (sandycreekmore@texasboomers.net) with the amount you spend and I'll have an envelope with your reimbursement to give you at the rally. This is less confusing for me than trying to take care of it at the rally!!!

REGULAR RICE (NOT INSTANT)
Any brand of rice purchased at any grocery store. Each signup is for 20 cups cooked ahead of time, cooled and stored in large zippy bags for easy storage in rig refrigerator.

I went to Costo and was disappointed with their selection. I found the 2/38 oz container pack of Pace salsa for $5.39. There is still a need for 2 more of these container packs. I didn't realize it until I got home. I only found shredded cheddar and colby mixed but the list stated just colby so I didn't buy it. They did have the olives for more than double the amount of Sam's price so I didn't buy it. Costo doesn't carry the brownies but they do have packages of assorted cookies that I can buy if needed.

Thank you Miss Maggie! The rice is the biggest thing I'm worried about! I've cooked up enough for 50 last year and it was a massive effort!!!! Every 20 cups helps! Just use regular rice (any cheap kind is fine) and I let it cool and then put in gallon size baggies to lay flat in the fridge.

Now I'm feeling bad. I can't go toSam's and not spend at least a $100. Sooooo add:

bag of colby (even though I would prefer rat) cheese

Also, Judy has volunteered for yoemen's duty in the kitchen that day. The only thing that means to me is no breakfast. Dang horse food.

The list is filling out nicely. I so appreciate everyone pitching in to help me with this humonguous task.
