I am looking for an adjustable load sensing relay to add to my slides to shut them down when they are full out and in.

Some slide outs now have these as standard - have you checked with the manufacturer of your slide out mechanism to see if they now have such a thing?

It would probably be helpful in getting responses if you mentioned the brand of the slide mechanism, or at least the year/make/model of coach you are asking about.

I think you will find it is a circuit not just a relay. Some type of current sensing, a driver, and the relay.
