I've been using one of the RCA models for a couple of years and absolutely love it. We spent two weeks in Destin in June and only bought one bag of ice the entire time. The rest of the time the little ice maker took care of all our needs (Me, the DW and two grandsons) The only reason I bought that bag was because we made a spur of the moment decision to rent a boat and I took a large cooler out with us.
I bag the ice as its made, the keep the bags in a small "12 pack" cooler until we need them. They do melt down some, but not much.
We've also had some issues with water quality at some spots, so I also use a Brita pour through filter.

I did a test run last night to flush out the system. The ice in the first few dumps was very thin and they would crush under my fingers. But as it ran longer they was frozen more and more. The ice was wet and we will have to figure out a way where they will not stick together when we place them in the freezer. The only negative I would give it now is it is noisy. Our Yorkie kept out of the kitchen because she did not know what the noise was.

It used about a third of the water to make a full tray. When the tray was full it cut off and the ice tray full light came on.
