I have an o5 Holiday Rambler Vacationer and I am planning on replacing the bench seats and table in the kitchen for one that can be moved around. Anyone else done this lately and have any suggestions on tables and chairs?

I had a free standing table and chairs in a 5ver that I had prior to the MH. I thought it was going to be eaiser to use and sit at. After having the 5ver for 3 years I was glad to go back to the bench dinette. The table jumps around on rough roads, and the chairs fell over many times. Plus we lost a lot of storage without the bench seats. Some people love the free standing table, it just didn't make sense for us.

Holiday has free standing tables & chairs as an option, so you might be able to get factory stuff. But it will probably be 2007/2008 model stuff, not what was offered back in 05.
If you Google RV Furniture you will find several possible sources.

Our '04 Pace Arrow came with Dinette and since we don't like dinette's we had the dealer remove the table and benches. We found some chairs that were very close to what Fleetwood uses themselves at a furniture store. As far as the table I found a round table at a finish your own furniture supplier. It has two drop leaves built into it. I experimented with a couple different types of Minwax Stain until I got a close match to the enterior wood color. Came out real good and everyone that sees it doesn't realize it's not factory.

Try some of the home centers for unfinished furniture. We looked at some small, unfinished tables and chairs for my father-in-law when he moved into assisted lving. Some of these would have probably been suitable for RV use and could be finished to match the wood in the RV.
PS: We have free-standing chairs for the dinette in our motorhome. DW finds the chairs easier to use with bad knees. The manufacturer provided a long strap with Velcro on the end to secure the chairs for travel. You could make something similar or use couple bungees.

Finding chairs and a table are the easy part as you can see from the other posts.
The bigger issue will be after the dinette is removed and you see that they didn't keep this type of swap in mind when they installed the dinette. There will be blemishes on the walls that you will need to cover.
There are lots of ways to handle this, from building a narrow storage area to cover the space, or covering it with fabric. Just don't be surprised that there are holes and stuff to cover up.

I think another thing to remember, is that you need to attach the table to the floor and secure the chairs. You don't want that stuff flying around if you need to stop in a hurry....I myself removed the dinette and replaced it with a folding leaf table and the 4 chairs store inside of the table.

Well we did pull the booth out and bought a nice little table and chair set from Kmart. The table is drop leaf on two sides and all four chairs fit nicely under the table. Hopefully we will never be on a rough road to move them around. And yes there were holes in the walls when we got it out, one of them was ugly. Also in one spot it looked like who every installed the booth tried three times to put in one screw. I used a little wood putty for now to patch the holes, will come up with something else later if this does not suit me well. I also put an stick on wood Remote holder to cover the ugly larger hole. Works well for us.

We thought the door to the kitchen dishes was tight enough, until I made a right hand turn, dipped the right rear wheels, and out came the Corelle Ware. Sure you can drop these and most times they don't break, but I trashed at least 6 place settings of dishes, it tiny little pieces all over.
We still find a piece occasionally.
I would suggest figuring out a anchoring system either/or to the wall, or to the floor. Otherwise if the table tips over sideways there will be a dent in the floor, or the oven will take a beating (our oven is across from the dining area).
