If you drain the lines be sure and unplug the ice maker from the 110 in case you plug in to power. On my coach at least there is a heat tape on the plastic line to keep it from freezing. When that kicks on if the line is dry it melts the plastic line (don't ask how I know).

I do believe the water reservoir for the dispenser will gravity drain completely when the line is removed from the valve. You could blow through the line to verify.
