Best Car to Tow
Any thoughts on the best/lightest/easiest car to tow behind a gas powered motor home?

A lot of that depends on your needs when using the toad and not towing it. We have a gas MH and tow a CRV. It tows easily and fits our needs very well when unhooked. We wanted to tow 4 down and have a car with good gas mileage.

Jeeps are popular, with Wrangler models being the lightest. If you also want to do some scenic trail riding or serious off-roading they are a great way to go.

We went to a CRV. It is one of the few left that are warranted to tow four down and are relatively easy to set up.
It is also a great car to get around.

Bought a CRV to tow but really didn't like the car. Now have a Jeep Wrangler.
Both cars are easy to tow four down. It's just a matter of taste.

Lightest? Cooper Mini, mid 90s Honda civic?
Easiest This one is very easy Jeep Wrangler hands down winner.
Best?? that is up to you what is best for you.

This answer depends on several factors.
First of which is what type of RV and what is the towing captivity? Your profile says Newmar 33'. Therefore, you probably can tow up to 5K lbs.
Another is if you looking to buy a new or used vehicle? There are several type that fit this towing capacity. Some models are no longer able to be flat towed after the 2012 model year, like the Ford Escape 4WD/AWD.
The new Honda CR-V is and the Jeep are two popular ones. I looked at both and decided that the CR-V fit my lifestyle much better than the Jeep.

The lightest would be a Smart Car
My HHR weighs in at around 3,200 lb.

We towed a Smart Car weighing 1650 pounds for a year and 10,000 miles. Towed nicely. We decided that when on the road for 6 months at a time it was a little small and since have had two Honda CR-Vs. Nicer car to tow with enough room for golf bags, groceries, etc at the same time. We have towed the CR-Vs about 25,000 miles without any problems. We lost 0.5 mpg on fuel economy when we switched to the heaver car. The CR-V weighs about twice what the Smart did.

CR-V's and Wranglers seem to head the list. They are different vehicles depending on your needs, lots of stuff to haul, Grand kids a dog and their gear and the like maybe better with a CR-V. Hitting the back country a Jeep Wrangler is hard to beat.
Both easy to set up and to tow.

I have a gas powered motorhome and pull a Jeep Wrangler Sahara 4-door. Pulls great and has been said is really versatile at destination.

Chevy Sonic
Check out the Chevy Sonic. Light weight and tows 4 down with automatic trans. Just pull one fuse. I bought a fuse switch so I flip switch to tow, turn key to AUX and put in neural. Tows great and is a pleasure to dive.

I've been flat towing a Honda Element for over a year with no problems, no picky setup, and the car itself is incredibly useful and comfortable for daily use. The only difficulty from your perspective may be that manufacturing was discontinued after 2011, so they're only available used.
Whatever car you decide on, install a charge line so you can be confident that your toad battery will stay alive without having to play games with pulling fuses or flipping switches.
