Lightest - Smart Car, Chevy Spark, Toyota Yaris, Toyota Echo, Hyundai Accent, Kia Rio
If you want lightweight and an automatic transmission, the previously mentioned Chevy Sonic is nice. I drove one as a free loaner when I was at Blue Ox for their fit program on my 2012 Hyundai Accent SE.
Easiest - one that involves only putting it in neutral, turning the key one click to release the steering wheel without turning on anything to draw down the battery, in addition to a function of the available towing equipment
Best - a four down towable car that fits your expected service and function requirements with acceptable weight, and readily towed.

don't know the best, but do know the one works - look down on my signature. even don't need to pull fuses, just follow 3 steps (start engine, shift to D, after 1 minute shift to N. run 3 minutes, turn key to stop engine and leave key there), go...

The only Honda's towable four down after the 2004 model year were the Fit and CR-V. We went all through that with Honda's legal dept and the OR and CA AG's offices. Finally got Honda to pay for the towing gear we bought but only because we got it in writing in Dec 2004 from Honda on Honda letterhead. Some '05 Pilot's owners manuals did say they were towable but Honda legal says they were misprints.

I agree with JFXG. We have a 2009 Element and it is a great toad. Have many thousands of towing miles on it. Same running gear as the CRV, so forget what Honda says, just follow the CRV towing instructions and no problems.

We tow a Jeep Grand Cherokee Limited. Has every option and is nice to have all those comforts when you drive it. Ours is an inexpensive 2000 model and has been great.

Which of course voids your power train warranty on newer Honda's and yes, the service dept's do look for the brackets and wiring.
But, it does seem that Honda relied on their "bean counters" to come up with the new towing info rather than what actually works.
