Flat tow choice to fit 5 adults.
I'm looking for something with two rows of seating and the back seat can fit 3 normal american sized adults.
The Ford Edge seems like the best bet so far, but I am looking at any options.

And are you going to be towing with that Hurricane? What's the towing limit? I've got a buddy who pulls a Ford Expedition, but it may be a bit above your towing limits.

We love our 2013 Honda CRV AWD and I think it would be fine as long as the back seat passengers were not overweight.

It's certainly a conundrum since "full size" cars and coach seats on airplanes have diminished while Americans have... expanded.
Between your towing capacity and the passenger load it's going to be hard to beat the Edge.

Hurricane I've got at least 5k available. But, no, I don't want an expedition or similar. Two rows is all I need since I have to drive this to work and park in a underground garage.

My three kids who are sknny as rails don't have enough room in the back of a CRV for a 30 minute ride. 3 Adults would be miserable.

I like them, but they are too narrow in my opinion. For 2, they are excellent I would think however. Especially the pre 2018 ones that had a little more back seat legroom.

Ford Edge is a little wider than the CRV or Equinox/Terrain.

Consider a Ford Flex, 3 rows of seating, comes in 6 and 7 passenger seating layout (bucket or bench seats on second row) and weighs in around 4200 pounds or so. Some versions are flat towable.

Does the 4-door Jeep Wrangler Unlimited seat 4 or 5? I have the 2-door and it only has belts for 4.

Kia Soul
We just bought a 2016 Kia Soul for a toad. Car is small on outside but surprisingly roomy inside. Can handle 5 adults, but 4 comfortably with great headroom and good leg room.
