Because if the key is off the steering can lock. That's a bad thing.

There is no steering wheel lock on the Outlook mentioned in the owner's manual and I even jacked the car up and tried every combination I could think of to get the steering wheel to lock.
I would like to know if anyone else has an Outlook/Acadia/Enclave with a steering wheel lock.

You know, I haven't tried to get my Enclave to lock. I'll check that out. Anyway, that's the big reason to use the Acc position, as far as I know.

My 08 Acadia SLT AWD has a steering wheel lock.

When the transmission is in park the steering wheel on mine is locked. With the transmission in neutral, the steering wheel is unlocked, but I can not remove the key.
