We will be towing a 2012 Chevy 1500 Avalanche 4WD. The owners manual simply states to put the transfer case in neutral before towing and turn the ignition switch to off and remove the key. No mention of battery disconnect or fuses. So, I'm wondering what would happen if I don't disconnect the battery?

If the key is off then it's just like when it's sitting in your driveway. Minor battery drain from the various computer systems onboard. You need no extra switch.
I have a switch in mine because the key has to be on in the ACC position to allow the steering wheel to turn and the transmission to be in Neutral, which normally allows the radio to be on and some other things. Those are what will drain my battery if left on too long.
If your key is in the OFF position, then your good to go without any switches or disconnects.
