Not sure 6 speeds are going to help highway MPG. There should be a slight improvement in city mileage.
The added gears give closer gear spacing to cut down on pollution, to meet EPA standards. The less drop in RPM between gears, the less the engine works and pollutes.

Update: from Dallas to Panhandle Florida averaged 7.3 MPG towing my Kia Forte. And that was doing whatever the speed limit was and road conditions allowed. Mostly 70-75 MPH. It seems like the V-10 likes to breathe around 2300-2500 RPM.

Average miles per gallon with Ford V-10
We have a 2016 32’ Leprechaun towing a 03’ Jeep Grand Cherokee and at 65 which is as fast as I want to drive we get about 7.5 with dash air on. Turn off dash air and run generator and coach air it goes up to 8.8 to 9.2. Learned that from the dealer we bought her from.

I am surprised that the generator uses less gas than the A/C running off of the engine.

The rooftop AC unit is essentially the same as a small home window AC unit, and is designed to run at a constant speed (120VAC at 60Hz). Running at one speed is more efficient than a unit that runs at varying speeds (such as an automobile belt-driven compressor that has to work at varying engine speeds).
In addition, generators are designed to run at one speed, generating power at 60Hz, controlling fuel flow to maintain speed at varying loads.
Running at one speed is more efficient for both the AC compressor and the generator engine.
Automotive AC compressors, and the engines the drive them, run at wildly varying speeds, so they sacrifice efficiency in favor of comfort.
We pretty much run the engine AC for comfort, as that is where we are sitting when travelling. We do run the roof AC if it's really hot outside for added comfort. As I've said several times, we did not buy this gas-guzzler for it's efficiency...fuel is the least expensive component of our ownership costs.

After reading this thread, I don't even want to check what I'm getting with my 31' forest river with the V10 & 6 speed. Not only that, now I'm worried I'll run out of gas out in the sticks somewhere

We carry two 5 gallon containers of gas in the bed of our F150 towed, and we also have a gas siphon hose (F150 has a 38 gallon tank...so LOTS of emergency fuel).
65 mph and below you will get decent fuel efficiency (or as decent as these things get); 70 mph and above efficiency will drop quickly.

We've averaged 8.18 since we brought ours home. It's got an 80 gallon tank. I'm more worried about running out in my car.

That is why you start looking for fuel at 1/2 tank.

Hi, If it is safe to drive 49 mph (78 kph) I get between 10 and 11 MPG (US gallon). RV is 28'5" and weighs 13600 lbs.
