I am about to buy my first Class C. It's a bit older and I want to ensure that it is protected from the Texas sun. The cheapest covered storage I can find is $105.00 per month in the San Antonio area. Does anyone have experience with those breathable RV covers?

Will this cover protect my unit and justify the savings of not parking it under a shed?

I would be curious how one would go about putting a cover on an rv, I had one for a car and it was a pain

No real issue to put on, although it's not something you'd do every weekend either. My 'C' is about 27 feet, 28 with the ladder. I bought a breathable ADCO cover last summer, put it on in early October for our long winter, and then off in April. There were good instructions for installing it, and it involves going on the roof obviously, but no big deal at all. Once its all draped over, it form-fits quite well (they make several sizes), aided by multiple cinch straps built into it. They even supply two weighted throw straps to do the strapping that go under the vehicle in about 4 places. All the connections are snap/click, and easy tension adjust.
It depends on what your needs are. I like to have my rig in a safe place (my back yard) and also wanted to take 3 batteries in for the winter to keep warm/charged. That would be difficult with offsite storage. There are also zippered side panels which allow you to get into the vehicle without fiddling about with straps or general removal.

The only nuisance was a squirrel decided to build his nest in my engine compartment right against the hood (and chewed off a chunk of my oil dipstick handle for good measure).
I haven't noticed any negative effects on the finish of the vehicle although they recommend a good wax job before storage. It doesn't flap around that much due to the cinch straps, but of course there is some.

I bought a cover for a trailer I had years ago.

The first time my wife, daughter and I put it on.

The second time my wife and I put it on.

The third time nobody showed up to help.

There was no fourth time.

We used that trailer every couple weeks but if you aren't going to be using your RV very much it may be worth the hassle.

Only the owner can make the call on if to cover the RV or not. There's lots of discussion on the topic - look at the search results from the link in SarahW's post.

Just like the OP, covered RV storage is too pricey in these parts and being under the SoCal Sun, it's a "no-brainer" for us. The roof, tires, seals and finish will last longer being covered from the sun.

We just acquired our second cover. The first cover lasted 3 years and gave its life in the effort...better to replace the cover vs. the roof - IMHO
