Fresh water is probably the least important tank as far as size. You can easily add more water, especially if you've got a gravity fill. You can dump it practically anywhere...it's water.
The black and gray are more critical. Once it's in the tank, you've got to find an approved place to empty those tanks. They are the limiting factor when dry camping. I'd take a rig with a small FW tank but relatively generous black and gray tanks over a rig with a big FW tank and small B & G tanks.
Just glancing at the 2007 brochure, they have 30-35 gal FW but 35 gal +/- B & G tanks. That's not bad considering some class A's come with a pair of 40 gal tanks. You could refill the water tank once or twice while camped and have room in the B & G tanks, depending on how you conserve, use other facilities, etc.
