pluged into ac power why does 12v power switch have to be on if frig is running on ac

I think the control board in the fridge still needs 12v to run. The switch is there so you can turn it off if you are not going to be using the fridge. If it's a 3-way fridge this may not apply.

IF fridge has a control module (circuit board) then 12V DC is REQUIRED to run controls....for either electric or propane

120V AC supplies power for electric element BUT circuit board controls heat cycles (cooling of fridge based on temp set point...thermostat sensing)
W/O 12V DC---no controls---no workie
