Gutting and Rebuilding - What to do?

My hubby inherited a 1982 Holiday Rambler Aluma-Lite something or other. It is quite small and was in need of total gutting due to mice, leaks, and lack of upkeep.
The removal portion of the project is nearly done - we still have some ceiling, paneling, and floor to work on - and I'm trying to research options for the rebuild. Unfortunately, we are really limited in that we have a center door in the back, so we can only really consider "hallway" designs.
At this point, I need to figure out how to rebuild the bathroom - it had a very small wet bath - in a way that it will fit the shell AND my XXL husband. Also, I will need to build/buy another kitchenette that will hold a stove top (I'm not replacing the original oven) and small sink.
I want to, of course, optimize space and ease of use, but not give myself a coronary trying to find the "perfect" options.
Do you all have any suggestions about bath and kitchen layouts? I am working with a very tiny space (My hubby says he thought it was a 16ft, but does that make any sense?) and want to make it useable for 2 adults and 2 small children. I'll worry about the 4 large dogs later.
