I'm a bit confused. Does the GVWR: mean the RV loaded with gas, water and propane? The GCWR: is 15,250 lb. The GVWR: is 11,030 lb. My dealer said I have an OCCC between 600-700 lbs

With an OCCC of 1656 on my 2016 Prism, I have used the CAT scales 3x now. With full diesel and propane, approx 500lbs of passengers, holding tanks empty and maybe 8 gals of water, i am usually anywhere between 250 and 50 lbs under the GVW of 11030. Adding in the toad on the dolly, I'm about 1K under the GCWR.

GVWR - this is the total weight the vehicle is allowed. It includes everything - fuel, water, propane, food, yourself, your spouse, your dog, all of your supplies and camping goodies.
GCWR - this is the maximum that the motorhome + towed vehicle or trailer can weigh.
Your max towing weight allowed is the GCWR - GVWR. If your GVWR is above the limit, you towing weight goes down.
An OCCC of 600 lbs or so is really limiting. Subtract your weight, your spouses weight, your pets or kids, your food, and what do you have left?

It's surprising how quickly the weight of all our incidentals adds up. I've done some calculations for our Family of three and know that a 600 lb capacity would never be sufficient.
Adding things up. One person at say, about 150 lbs. Clothing, food (canned foods and liquids add up quickly), camp chair, portable grill, tools, and other supplies will add at least 100 lbs,, most likely more. Fill the 37 gallon fresh water tank and the total will be getting real close to the 600 lb mark.
This set up may be doable for the OP but he or she would need to remain conscious of what was loaded. Myself, i'd forget the jacks and the seating to gain a bit more capacity or look at another rig with a higher OCCC.

The following is a weight chart of the contents of our 324V. As it is a 2005, there is no OCCC Weight listed on the vehicle. I have listed location as B (behind) or F (forward) of the rear axle. We weighed everything as we packed it aboard. Most stuff like clothes and dry food gets stored in plastic bins.
We generally start with a full water tank and empty holding tanks and always dump holding when we fill the water, so the weight is constant.
We are kind of heavy on computers because I work from the RV and need a Dell mobile workstation.
We weighed the RV on our last trip while fully loaded and came out at 11,460, just 40# under our max. Our total gear is 1315# with 584# behind the rear axle and 729# forward of it.
Hope that this helps people with their decisions.

But there OP is considering a Sprinter C... Completely different than the gas Ford. They have very limited carrying capacity to begin with, unlike the Ford chassis.
We've looked at a lot of them and I can't remember seeing one with more than 1359# OCCC.

Our MBS 2016 Prism 24g has an OCCC of 1656#

The point in adding the chart was to show how easy it is to accumulate weight in a small RV and give a realistic view of where it comes from. We are just two people and we could never live with an OCCC of less than 1000#. We make a lot of careful choices to stay below 1350#.
