This is probably a silly question, but as we start our full time soon I am wondering how do we ensure that we have diesel available to us. I know that the main interstates will have truck stops, but what about when we are traveling the side roads. Is there a guide to diesel stations? Any help is appreciated.

Couple of things here:
Always drive on the 'top' half of the tank. When you get below half, then start looking.
Most Garmin GPS units have a feature to search for closest diesel station.
When we do surface roads on some of our western trips, I always kept 2, 5 gallon containers of diesel in the basement. Never even got close but once.

We travel mostly the "blue roads" and have never had problems finding diesel...it's a rare small town that doesn't have at least one diesel pump.
You can check sites such as this for stations along the way that have diesel.
Sites like DieselBoss have a listing of truck stops, but they're mostly along the main highways. By the same token, books such as The Next Exit and The RVer's Friend list gas stations, but mainly along the main highways.

The only problem that we occasionally encounter with small towns is not being able to get the MH (with car attached) into the service stations. But since we have a 100 gallon capacity, we know that we will probably find a truck facility that we can use - we start looking when we are getting towards 1/2 full.

I'm late to this party but I'd like to add that every diesel owner should purchase "The RVers Friend." it is a directory of every diesel truck-stop and filling station in North America. It costs $14.95. I'm on my 2nd edition. It's been a great help in my travels.
I think you can order it at www.truckstops.com

Every one? I thought it listed only those stations along the major highways (like Interstates). I know we used to have one, but it wasn't of much help to us since we usually don't travel those roads. Maybe they've changed in the years since I bought the last one.

You got me.
I went back to the book and read that it listed "Over 6,500 RV Accessible Diesel & Service Locations . . ."
Many of these locations are NOT on interstate highways.
