I’m going to install 120mm box fans in the top of the refrigerator vent on the roof to exhaust the hot air from the rear of the refrigerator. What is your recommendation as to how many, I’m thinking just 2 with 114 CFM and power draw of.25amps. Also would you recommend covering up the vent area that the fans don’t cover or leave it open.

JMHO: Leave the rest of the vent open ; if for any reason the fans don't work or quit , you want as much vent open as possible.

If you use more than one fan, (and/or cover up any portion of the vent area), you may have to ALWAYS run the fan, or fans, when the refrigerator is turned ON/operating).
One 4" muffin fan has worked with my Norcold 682 fridge for over 10 years and is not needed if/when the OS temp is 65 degrees F or cooler.

I removed the upper air box completely and installed two 120mm ball bearing 12vdc fans...reinstalled...no addt'l baffling, no thermostat. Air blows out the chimney unrestricted. Those two fans and four small fans that are attached to my refer cooling fins are the best mod I made to the whole RV. 31 degree fridge at setting number 4 always. Runs on propane while traveling and NO CHIMNEY FANS...it runs at least as cool as camped. Make sure air will pass unrestricted thru chimney with and w/o fan operation and you'll be fine in any situation.

Years ago I installed a 4" square box fan from a computer power supply at the rear base of our fridge pointing up with a toggle switch and indicator lite visible thru the louvers in the access door. I turn it on when it gets in the 80's and it seems to help quite a bit.
