Excuse my ignorance, I'm somewhat of a newbie to RV'ing. What is "boondocking?"

Camping without electric, water or sewer hookups, as in "out in the boondocks".

But it could be anywhere without hookups.

Boondocking is dry camping in the middle of nowhere.

Dry camping is camping without hookups where ever you wish but very near civilization. Such as staying overnight in a Walmart parking lot or in a roadside pull off.
