Water bladder
I am looking for a sturdy 50ish gallon potable water bladder that will fit between my hitch and closed tail gate (about 27")when in use (otherwise I will carry it folded up in the bay). There are lot of them out there but I am wondering if anyone has one that they are pleased with.

We've used this one for years, of course we don't carry it on top of the vehicle. With a 12-volt pump...you're set.

A lot of people fabricate brackets to lay a piece or two of plywood on top of the hitch when using the bladder.

I will want to haul water when towing also.

This bladder folds up to about 18" by 10". It is not rigid. To best describe it, would be to say it is similar to a water bed
Not sure I understand what you mean about it fitting. Lately, we use a Honda CR-V....fits in the back full, no problem.

50 gallons will add over 400# of weight to the very tail end of the truck. If towing at the same time, how will this effect you weights?

Can you fit a 35" bladder when filled in a 27" space? I don't know the nature of these things. At 27" from the closed tailgate I have a couple of 1/4" braces coming off my B&W hitch.
As far as the weight, I don't know. I have a drw Duramax and would only be driving short distances with a full bladder.

The bladder does not have to sit perfectly flat. I can shape around things as long as there are no rubbing sharp edges.
We empty out our toad, a Honda CR-V.., put the seats down, it fits in there perfectly....and use the pump to pump it into the motorhome. If you're worried about closing the tailgate, close the tailgate BEFORE filling it with water.
A gallon of water weighs 8.345 lbs. x 40 = 333 lbs........less than my ex mother-in-law.

A lot of people use the Shurflo 2088 type pump fitted with garden hose fittings.
