A minute steak with a cheese slice on bread - served like a burger. So simple, but so good.

My favorite "One Person" meal...

Fillet Mignon - medium rare... 7 min cook time on a HOT grill (sometimes I'll cut one in half.. rather have a small piece of tender meat than a large piece of tough meat)

Baked Potato with sour cream - wash and while dripping wet, wrap in a paper towel and microwave on high for 5 min. turn over and 1 min. more.

Add you fav. veggie... for this meal I like asparagus (tiny thin stems and only the top 4"). Grill to make less clean-up... place on a piece of foil, drizzle with olive oil, pinch of salt and pepper, roll up and put on the edge of the grill while it's warming up for the steak... it'll be ready when the steak is ('bout 10-12 min.) warm-up time + steak time = DONE

Anything leftover in the fridge wrapped in a tortilla makes a meal...I always keep a package of tortillas in the freezer

This is one of my favorites as well. I like to grill the asparagus directly on the grill after covering with olive oil and garlic because I like the black stuff. And I usually have salad instead of baked.
My most favorite is grilled salmon, asparagus, salad and sometimes rice. For the salmon, I make a foil bag-thing. I put the salmon, a little olive oil, fresh dill, white wine, garlic, salt, pepper in foil and seal it tight so it kind of poaches. Makes great, moist salmon. The tricky part is knowing when it's done They say 20 minutes for each inch of thickness. I use that as a guide, but mostly play it by ear and experience.

One of my other favorites is taco salad. I make it with chicken and make enough to freeze 4 or 5 servings and use the leftovers for more taco salads or nachos. For the seasoning, I start with just packaged taco seasoning, but add garlic (there's a theme in my cooking), dried cilantro (and fresh with the greens in the salad), and a bit of powered achiote. The achiote (also called anatto) is kind of hard to find, but makes the difference in taco salad and mexican rice. I cook the chicken breast whole in the seasoning, the shred it with a fork and put it back in the pan with additional seasoning. Greens, tomato, olives, avocado, sour cream and salsa with a side of tortilla chips (my new favorite are tostitos black bean and garlic flavored - mmmmm).

I'm thinking of getting a Geo. Foreman grill so I can cook outside and keep the smells out of the MH. Any comments/advice?

BluePill aka Lenny... I have a Forman grill, but it's for use when I have to stay INSIDE. All my normal grilling is done on my beloved Weber Baby "Q". I have a smooth griddle plate for it to cook things like my "eggs and hash browns". I try to cook totally on it but Mother Nature occasionally forces me inside

Ya know how, when you get to the bottom of a bag of tortilla chips, they're usually small pieces and crumbs.... Don't throw them out!!!
Place them on the bottom of a plate, cover with a small can of Chilly with Beans, shredded cheese, and sprinkle with chopped onions, microwave till hot, serve with a scoop of sour cream on top if you have it.
