Beef Stew, Crockpot

2 lb Beef chuck or stew meat, cut in 1" cubes
1/4 c Flour
1 1/2 ts Salt
1/2 ts Pepper
1 1/2 c Beef broth
1 ts Worcestershire sauce
1 Clove garlic, minced
1 Bay leaf
1 ts Paprika
4 Carrots, sliced
3 Potatoes, diced
2 Onions, chopped
1 Stalk celery, sliced
2 ts Kitchen Bouquet (optional)

Place meat in crock pot. Mix flour, salt and pepper and pour over meat; stir to coat meat with flour. Add remaining ingredients and stir to mix well. Cover and cook on low (200 degrees) for 10 to 12 hours or high (300 degrees) for 4 to 6 hours. Stir stew thoroughly before serving.

Beer Cake - Crockpot

2/3 c Butter
1 1/2 c Brown sugar
3 Eggs
2 1/2 c Flour
1 1/2 ts Baking powder
1/4 ts Baking soda
1 ts Cinnamon
1/4 ts Nutmeg
1 1/2 c Beer
1 c Chopped walnuts
1 c Raisins

Cream butter and sugar until light and fluffy. Add eggs one at a time mix well. Add flour, soda, baking powder, cinnamon, nutmeg to creamy mixture alternately with beer. Stir in walnuts and raisins. Pour mixture into well buttered and floured cake pan that will fit into crockpot. Cover tin with four or five paper towels. Put into pot. Put lid on crockpot loosely to allow steam to escape. Cook on high for 3 1/2 hours or until cake is done.
Remove pan from pot and allow cake to cool on wire rack for 15 minutes before removing from pan.

Boston Brown Bread Great for Camping(Crockpot)

1/2 c Whole wheat flour
1/4 c All-purpose flour
1/4 c Yellow cornmeal
1/2 ts Baking powder
1/4 ts Baking soda
1/4 ts Salt
1 Beaten egg
1/4 c Molasses
2 tb Sugar
2 ts Cooking oil
3/4 c Buttermilk
2 tb Raisins

Stir together flours, cornmeal, baking powder, soda, and salt. Combine egg, molasses, sugar and oil. Add flour mixture to molasses mixture alternately with buttermilk; beat well. Stir in raisons. Turn batter into two well greased 16 ounce vegetable cans. Cover cans tightly with foil. Place cans in crockery cooker. Cover and cook on high heat setting fro 3 hours. Remove cans from cooker. Cool 10 minutes in cans. Serve warm. Makes 2 loaves.

Chicken and Sausage Gumbo (Crockpot)

1/3 c All-purpose flour
1/3 c Cooking oil
3 c Water
12 oz Fully cooked smoked sausage links, sliced and quartered
2 c Chopped cooked chicken
2 c Sliced okra OR one 10-oz package frozen whole okra, sliced
1/2 Inch thick
1 c Chopped onion
1/2 c Chopped green pepper
1/2 c Chopped celery
4 Cloves garlic, minced
1 ts Salt
1/2 ts Pepper
1/4 ts Ground red pepper
-Hot cooked rice

For roux, in a heavy 2-quart saucepan stir together flour and oil till smooth. Cook over medium-high heat 5 minutes, stirring constantly. Reduce heat to medium. Cook and stir constantly about 15 minutes more or till a dark, reddish brown roux forms. Cool.

In a 3 1/2, 4-, 5-, or 6-quart crockery cooker place water. Stir in roux. Add sausage, chicken, okra, onion, green pepper, celery, garlic, salt, pepper, and red pepper. Cover; cook on low-heat setting for 10-12 hours or on high-heat setting for 4 1/2 to 5 hours. Skim off fat. Serve over rice.
Makes 6 servings.

3 -(up to) 4 lb Chicken; in large pieces/quartered
Salt and pepper
1/2 c Chopped green onions
1/2 c Soy sauce
1/4 c Dry white wine
1/2 c Water
1/2 c Honey

Sprinkle chicken with salt and pepper. Place in Crockpot. Combine onion, soy sauce, wine and water. Pour over chicken. Cover and cook on Low for 3-4 hours or until chicken is tender. Remove chicken from pot. (Chicken and sauce may be refrigerate and browned at a later time, if desired.) Arrange on broiler pan. Brush honey on chicken. Broil until golden brown, brushing with honey several times.

1 Carrot; in chunks
1 Green pepper; cubed
1 md Onion; quartered
2 tb Tapioca; quick-cooking
4 Chicken breasts- boned; cut
8 oz Pineapple chunks; canned
1/3 c Dark brown sugar; firmly pa
1/3 c Red wine vinegar
1 tb Soy sauce
1 ts Chicken bouillon; instant g
1/2 ts Garlic powder
2 tb Ginger-root; fresh; minced
1 ts Dried cilantro or 10 leaves
Rice; hot cooked

For crockpot cooking: Put vegs.in bottom of crockpot. Sprinkle tapioca over vegetables. Place chicken atop vegs. Combine all other ingreds. except rice in a small bowl. Pour over chicken. Cover crockpot and turn to low and cook for 8-10 hours. Before serving make rice. Serve over rice. Leftovers can be reheated in microwave. To cook in oven Put vegetables in bottom of a greased pan. Sprinkle vegs. with tapioca. Add chicken to pan. Combine all other ingreds. except rice in a small bowl. Pour over chicken. Cover pan tightly with foil. Bake in 300 deg. oven for 2 hours. Serve over rice.
Leftovers can be reheated in microwave. *You can also use 2 T. chopped candied ginger.

Citrus Fish - Crockpot

1 1/2 lb Fish fillets
Salt and pepper; to taste
1 md Onion; chopped
5 tb Chopped parsley
4 ts Oil
2 ts Grated lemon rind
2 ts Grated orange rind
Orange and lemon slices; for garnish

Butter crockpot and put salt and pepper on fish to taste. Then place fish in pot. Put onion, parsley and grated rinds and oil over fish. Cover and cook on low for 1 1/2 hours. Serve garnished with orange and lemon slices

Corned Beef and Cabbage in the Crockpot

1 3 lb. corned beef; up to 4
2 c Water
1/2 c Brown sugar
1/4 ts Ground cloves
1 ts Pickling spice
1 ts Dry mustard
1 ts Horseradish
1 Onion; chopped
1 Bay leaf
1 Head cabbage

Place corned beef in the crockpot. Mix together the water and all ingredients except the cabbage. Pour mixture over meat. Cover and cook on Low for 10-12 hours (MY note: if you get a late start, say 9 or 10 AM, cook it on high for 3 hours, then low for 5-6 hours - it's got to cook a longtime to be falling-apart-melt-in-your-mouth). Remove corned beef from crock pot at end of cooking time and keep warm. Strain juice and return it to the crockpot, along with the cabbage, which has been cut into wedges. Cover and cook on High for 20-30 minutes, or until the cabbage is fork tender

1 1/2 lb Boneless beef chunk or round steak (up to 2-1/2)
1 ts Salt
1/8 ts Pepper
1/4 ts Garlic salt
1 tb Worcestershire sauce
1 1/4 c Beef bouillon (up to 1-1/2)
1 tb Catsup
2 tb Dry white wine
1/4 lb Sliced fresh mushrooms
1/3 c Flour
1 c Sour cream
Rice or noodles; to serve -5-6

Cut beef in strips or cubes. Coat with salt and pepper .Place in bottom of crock pot. Mix garlic salt, Worcestershire sauce, beef bouillon and catsup. Pour over meat. Cover and cook on Low for 6-8 hours until tender. Turn up to High. Add 2 T. dry white wine and mushrooms. Dissolve flour in small amount of water. Add to meat mixture. Stir to blend. Cook on High for 15 minutes until slightly thickened. Stir in sour cream. Turn off heat. Serve with rice or noodles.

Crockpot Chicken and Herb Dumplings

3 lb Chicken
Salt and pepper
2 Cloves garlic, minced
1/4 ts Powdered marjoram
1/4 ts Powdered thyme
1 Bay leaf
1/2 c Dry white wine
1 c Dairy sour cream
1 c Packaged biscuit mix
1 tb Chopped parsley
6 tb Milk
10 Small white onions

Sprinkle chicken with salt and pepper, place in crockpot. Insert cloves in one onion. Put all onions into pot. Add garlic, marjoram, thyme, bay leaf and wine. Cover and cook on low 5 to 6 hours. Remove bay leaf and cloves. Stir in sour cream. Increase heat to high and combine biscuit mix with parsley. Stir milk into biscuit mix until well moistened. Drop dumplings from teaspoon around edge of pot. Cover and cook on high for 30 minutes.

1 pk Frozen lima beans
1 c Tomato juice
1 Carrot; 1/2 inch pcs
1 Stalk celery; 1/2"pcs
1 Onion; chopped
1 Cl Garlic; minced
1 Bay leaf
1 ts Chicken bouillon granules
1/2 ts Dried basil; crushed
1/2 ts Dried oregano; crushed
3 Boneless chicken breasts
3 Chicken drumsticks
8 oz Smoked kielbasa

Place carrots, limas, celery and onions on bottom of crockpot which has been sprayed with Pam. Combine herbs, juice and bouillon and add to vegetables Place chicken on top of vegetables. Cut sausage into pieces. Put chicken and sausage on to of vegs Cover crockpot and cook on Low heat for 10 hours or on high for 5 hour Remove bay leaf before serving.

Crockpot Hamburger Soup

1 lb Lean ground beef
1 cn (8-oz.) tomato sauce
1/4 ts Pepper
1 tb Soy sauce
1/4 ts Oregano
1 c Sliced celery
1/4 ts Basil
1 c Sliced carrots
1/4 ts Seasoned salt
1 c Macaroni;cooked and drained
1 Envelope onion soup mix
1/4 c Grated Parmesan cheese
3 c Boiling water

Crumble beef into slow-cooking pot. Add pepper,oregano, basil, seasoned salt, and dry soup mix. Stir in water, tomato sauce and soy sauce; then add celery and carrots. Cover and cook on low for 6 to 8 hours. Turn control to high. Add cooked macaroni and Parmesan cheese. Cover and cook on high for 10 to 15 minutes.
Makes 5 to 6 servings.
