I'm swiping this from another forum (IRV2)for your enjoyments. Also we found a one and half quart crock pot for less then $20 that worked great for just two people.

A great dessert from the Rival Crock Pot, Incredibly Easy Recipes book:
Makes 8 to 10 servings (depends who's there)
1 can (21 Oz.) cherry pie filling
1 pkg. (18 1/4 Oz.) yellow cake mix
1/2 cup(1 stick) butter, melted
1/3 cup chopped walnuts (optional)
whipped topping or vanilla ice cream
1. Place pie filling in Crock Pot
2. Mix cake mmix and melted butter in bowl. Spread evenly over pie filling. Sprinkle nuts on top.
Cover & cook on LOW 3-4 hours or on HIGH 1 1/2 - 2 hours.
3. Spoon into serving dishes, and serve warm with whipped topping or ice cream.
I have modified this receipe using different pie fillings to suite our tastes at various times. One of our favorites is apple pie filling and spice cake mix. If you have a large group you can double the pie filling and leave the cake mix as is.
