Sounds like a good one! Bacon-cheese stuffed cod. I'll try it. I also have a passion for fly-fishing, and although we release most of them, I still like to eat fish regularly, and this might work well with mountain whitefish or trout. Everything's better with bacon, right? Do you have any unusual recipes for steelhead?

baste with a thick BBQ sauce then roll in corn flakes and grill
or
place fish in small shallow dish add milk (or vegetable broth ) till half way up side of fish
place in 425deg oven till fish starts to change color (about 4/5 min) remove and flip fish
place a slice of provolone cheese on top and some chopped sun dried tomato
return to oven till cheese browns (4/5 min)
